Recipe: Chick Pea Patties

We are saving money at the moment, and tonight I decided to make dinner with ingredients that were already in our kitchen instead of doing the shopping.

These are the ingredients I used:
  • 400g can of chick peas (drained and mashed)
  • 2 carrots (grated)
  • 1 cup of frozen peas
  • 4 eggs (lightly whisked)
  • 2/3 cup of tasty cheese (grated)
  • 3/4 cup of plain flour
  • 2 cloves of garlic
  • 4 iceberg lettuce leafs

Servings: 4

Steps:
  1. Mix all the ingredients together. It'll become a thick mixture.
  2. Heat a frying pan with some olive oil.
  3. Heap the mixture into lumps and flatten into patties.
  4. Cook until the centres are no longer runny (1-3 minutes each side).
  5. Serve a-top a full lettuce leaf.
It doesn't have meat in it, and won't be the tastiest meal I eat this week, but it is elegant and has a "Mum" feel to it that is satisfying. Enjoy!
