
- Quinoa Seeds, 1/2 cup washed
- Chia Seeds, 1 teaspoon per serve
- Carrots, 1 1/2 sliced
- Frozen Beans, a couple of handfuls
- Frozen Peas, a couple of handfuls
- Frozen Corn, a couple of handfuls
- 1 Onion, diced
- 1 Chilli, diced finely with the seeds left in
- 1 Litre of Vegetable Stock
Steps:
- Put a medium sized pot on high.
- Add the litre of vegetable stock, the quinoa seeds and all the vegetables.
- Cook for 25 minutes with the lid on.
- Serve in bowls and sprinkle a teaspoon of chia seeds over the top.
