Recipe: Spicy Quinoa Soup

Tonight we cooked a vegetable soup with quinoa seeds thanks to Donna's Nannie and inspired by Show Me the Curry. It tastes quite nice, and the chilli is a key ingredient, so don't skip it!

Ingredients:

  • Quinoa Seeds, 1/2 cup washed
  • Chia Seeds, 1 teaspoon per serve
  • Carrots, 1 1/2 sliced
  • Frozen Beans, a couple of handfuls
  • Frozen Peas, a couple of handfuls
  • Frozen Corn, a couple of handfuls
  • 1 Onion, diced
  • 1 Chilli, diced finely with the seeds left in
  • 1 Litre of Vegetable Stock

Steps:
  1. Put a medium sized pot on high.
  2. Add the litre of vegetable stock, the quinoa seeds and all the vegetables.
  3. Cook for 25 minutes with the lid on.
  4. Serve in bowls and sprinkle a teaspoon of chia seeds over the top.
